Tim's Slow-Cooked Chicken Recipe

Spicy Slow Cooked Chicken Recipe

This a very basic recipe for pasture raised broiler chicken that turned out to be very juicy, flavorful and tender.

  • If frozen, thaw your broiler chicken completely.
  • Preheat oven to 250 degrees F.
  • Place chicken in a broiler pan.
  • Coat outside of chicken liberally with the following spices:
    • Garlic Powder
    • Smokey Paprika
    • Coarse Ground Pepper
    • Cayenne Pepper
    • Sea Salt
  • Cook chicken until internal temperature is 165 degrees F (For an 8-pound chicken, it took about 1 hour and 45 minutes in a steam oven to reach the desired temperature.).
  • When your broiler chicken is done, cover with foil and allow it to rest for 10-15 minutes.

Carve and enjoy!

**Some people prefer their chicken cooked to a higher temperature. Please cook to your preferred doneness. Consuming undercooked meat can lead to food-borne illness.

As with any meat, rushing by using high temperatures can cause chicken to be tough and/or dry.
